Hospitality Operations Module

‘Hospitality Operations’ is one of the theoretical modules of the International Hospitality Management first year where by the students will gain insight into all aspects of the operational Rooms Division and Food & Beverage environment within the international hospitality industry. Studying in Bali, this subject in particular comes at an advantage to the students as they are highly exposed to the industry and get to experience first hand the day to day running of operational departments.


This module contributes to the first year learning and aids in ensuring that the students develop a general understanding of all aspects of hotel operations, including the supporting departments that the light doesn’t often shine on such as the Human Resource Management, Marketing, Finance and Law in a practical and theoretical Real World context.

The Hospitality Operations module also provides an introduction to the production and operational lodging of the food & beverage industry by offering insight into standards and operational procedures with their financial- and legal aspects and offering hospitality in a professional way. With many hotels and restaurants mushrooming in Bali on almost a daily basis, this component helps the students to see and understand that a lot of paper work and other procedures go into making this happen and that it does not just happen over night.

The Hospitality Operations module is also directly connected to the first year practical module “Real World Learning 1” where the students will later get to convert their theoretical knowledge and foundation into practical work experience at our partner learning hotel Alila Hotels and Resorts.

Studying Hospitality Management in Bali which happens to be Indonesia’s melting pot in regards to Tourism the students still however receive international hotel background and reference from a number of the main cities on different continents (e.g. Europe, Africa, Asia, USA, Australia). In addition to this Hotel Franchises and Multinational cooperation’s that operate in a vast majority of countries aid in giving the students better understanding of the Industry and how it functions on a Global scale.

Unit : 1 The Hospitality Industry (6 EC)

In this unit Universitas Triatma Mulya Stenden gives the students the ability to demonstrate an understanding of different lodging and food & beverage concepts and relevant basic operational procedures.

Unit 2: Hospitality Foundation (3 EC)

Gives students understanding and the ability to describe terminologies, and theories related to basic hospitality operations.

Unit 3: Hospitality Finance (3 EC)

Helps Demonstrate awareness of general business performance, and understand how revenue is generated and costs are calculated within hospitality operations.

Some topics in this module will also be covered by Albert Kooy a Stenden icon which makes it all the more exciting for our students. During this module, students will develop written assignments and essay tests as a way to showcase their knowledge. This module also comprises of Lectures, Workshops and (PBL) Problem based Learning system which is used in the global network of Stenden. These have been designed to support the construction of research and written assignments in which all the various components of the module are featured on a multi-and-interdisciplinary basis.
